This is 100% a #lazybakingday kind of recipe, perfect for potlucks and gatherings. I still haven’t gotten around to making actual cookies from scratch during this time. I can’t find flour anywhere! But I’ve got a package of Bob’s Red Mill cookie mix… so here’s the easiest recipe I’ll probably ever post!

Quick, Easy Matcha Chocolate Chip Cookies
Ingredients
- 1 package Bob’s Red Mill Gluten Free Chocolate Chip Cookie Mix
- 1 large egg
- 3 tbsp water
- 1 stick butter, softened
- 2 tsp matcha powder – linked to the one I use (Matcha Love Culinary Matcha!)
Instructions
Tip: You’ll want to take the butter out of the fridge and let it soften for about 1-2 hours
- Preheat oven to 375 degrees Fahrenheit
- In a mixing bowl, whisk together the eggs and water, combine with the butter, then add the cookie mix and stir until everything’s mixed through.
- Add in matcha powder to the mix.
- Scoop out the dough with a cookie scoop or by hand, roll into little tablespoon-sized balls, and place them on a baking mat.
- Bake for 10-13 minutes, depending on how you like your cookies.
- Move to a wire rack to cool down.
Tricks: Remember that stuff continues to heat/bake even out of the oven! The trick to chewy cookies is to bake until they just turn golden brown at the edges, then take them out even if they’re still a little soft in the middle – let them cool for 5 minutes and they should firm up enough!
